How To Make Gluten Free German Chocolate Cake
German Chocolate cake has been my favorite cake forever. . Every year for my birthday I get a German Chocolate cake from either my wife or my Mom. The homemade icing is bar far and away my favorite part of the cake. Combine the quality of the homemade icing with a moist German chocolate cake and you can’t beat it!
We now have family members that are on gluten free diets. So that we don’t leave anyone out, I set out on finding a way to make a gluten free German chocolate cake. No need to stop the annual tradition now!
Gluten-free cooking isn’t always easy. Making desserts that are gluten free can be even harder. The major ingredient difference in gluten free German Chocolate cake is the rice flour.
The necessary ingredients:
- 1 cup of buttermilk
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tbsp corn starch
- 2 cups rice flour
- 1 tsp vanilla
- 1 cup butter or margarine
- 2 cups of sugar, divided
- 6 eggs, separated
- 1/2 cup of boiling water
- 4 ounces sweet German Chocolate
Prep:
- Melt the chocolate @ a boiling point. Then cool it.
- In a small mixing bowl, mix the egg whites. Add 1/2 cup of sugar and heat until stiff. Set it aside.
- In a large mixing bowl, mix the cream butter and the remaining sugar until fluffy. Stir in the vanilla. Add egg yolks and beat very well. Blend in the chocolate.
- Sift in the corn starch, baking powder, soda and salt. Add the buttermilk to the chocolate mix, beating it after each addition until it’s smooth. Fold in the beaten egg whites.
- Pour into three 8-inch or 9-inch layer pans lined on bottom with paper.
- Bake @ 350 degrees for about 30 minutes or until done.
- Cool and the frost the tops of the cakes only.
